Somen Kabocha (Spaghetti Squash)

A fascinating squash with a unique texture that separates into delicate, noodle-like strands

Somen kabocha is a remarkable variety of squash whose flesh naturally separates into fine, noodle-like strands when cooked. Also known as kinshi-uri, meaning “golden thread melon,” it belongs to the squash family but has a texture unlike that of ordinary pumpkins and squash.

The fruit has an oblong, barrel-like shape, typically measuring 20–25 cm in length and weighing around 600–800 g. When fully ripe, its firm outer skin turns a vivid yellow, while the flesh inside is pale yellow and composed of delicate, thin fibers.

How to Enjoy Somen Kabocha

To prepare it, the squash is cut into round slices and boiled for approximately 20 minutes. As it cooks, the flesh loosens into fine strands resembling Japanese somen noodles. These strands are then separated and rinsed in cold water before being seasoned, often with sanbaizu, a traditional Japanese dressing made with vinegar, soy sauce, and sugar.

Thanks to its mild, refreshing flavor, somen kabocha is also excellent in salads, where its crisp texture can be enjoyed. It can additionally be prepared grilled or deep-fried, making it a versatile ingredient for a variety of dishes.

Season

Somen kabocha is in season from June through September. During the summer months, its light taste and refreshing texture make it a delightful addition to seasonal Japanese cuisine.
