Muromachi Sake Brewery: Golden Plum Liqueur

A Luxurious Liqueur Slowly Crafted from Omachi Rice Sake and Fruit

Muromachi Sake Brewery began producing sake around 1688, during Japan’s Edo period. Drawing on centuries of brewing tradition, the brewery creates its Golden Plum Liqueur using locally grown green plums and sake made from Omachi rice, a distinctive rice variety originating in Okayama Prefecture.

The plums, a variety known as Kojo-ume, are grown under contract in Akaiwa City, Okayama. They are steeped in Omachi rice sake for more than a year, gradually imparting their flavor and producing a beautiful golden-colored liqueur.

Creating the finished drink required more than three years of experimentation. The brewers carefully tested which types of sake would best complement the fruit, how to preserve the plums’ natural aroma and flavor, and what level of sweetness would create the ideal balance.

Rich Plum Flavor with a Delicate Sweetness

The result is a richly flavored plum liqueur that captures the concentrated fruitiness of Japanese plums. Its appealing balance of sweetness and gentle acidity is complemented by a full, fragrant aroma, making each sip a distinctive experience.

The quality of this carefully crafted liqueur received international recognition when it won a gold medal at the 2009 Beverage Testing Institute (BTI) competition, one of North America’s major beverage evaluation programs.

For visitors exploring Okayama, this golden plum liqueur offers a taste of the region’s brewing heritage, combining traditional sake-making expertise with the natural character of locally grown fruit.
