Mamakari (Sappa Fish)

Okayama’s Irresistible Local Fish That Makes You Want to Borrow Extra Rice!

Mamakari is the local name used for a small fish found around the Seto Inland Sea. More commonly known throughout Japan as sappa, it belongs to the herring family and is a beloved specialty of Okayama Prefecture.

The name “mamakari” has a charming origin. In Japanese, mama means cooked rice, while kari refers to borrowing. The fish is said to be so delicious that people would finish all the rice at home and borrow more from their neighbors just to keep eating it!

Delicious Ways to Enjoy Mamakari

Despite its small size, mamakari has a relatively high fat content and a mild flavor, with less of the distinctive fishy smell associated with some oily fish. One of the best-known preparations is vinegar-marinated mamakari, made by removing the head and internal organs before marinating the fish in vinegar. This traditional dish is enjoyed throughout Japan.

Mamakari can also be grilled and dipped in soy sauce or deep-fried for a crispy, satisfying treat. Another popular specialty is mamakari sugata-zushi, a traditional pressed sushi in which the fish is split open, deboned, and prepared with its head and tail still attached, creating an attractive presentation.

When visiting Okayama, be sure to try mamakari in one of its many preparations. Its distinctive flavor and traditional place in local cuisine make it a memorable taste of the Seto Inland Sea region.
