The Ideal Growing Environment of the Hiruzen Highlands
The Hiruzen Highlands lie at elevations of approximately 450 meters or higher. The region’s soil, known locally as kuroboko, is volcanic ash soil that is particularly well suited to growing daikon radishes.
Hiruzen daikon thrives in this favorable environment. During the day, sunlight allows the plants to photosynthesize and produce nutrients. When temperatures drop at night, the radishes respond to the cold by increasing the amount of nutrients they store. This natural process, known as cold conditioning, helps produce radishes with enhanced nutritional value and excellent flavor.
Beautiful Appearance and Outstanding Flavor
Hiruzen daikon is prized for its well-balanced qualities: an attractive shape, a glossy appearance, and a delicious taste. The region’s cool climate and growing conditions help create a distinctive local vegetable that is valued for both its appearance and eating quality.
Best Season
The main harvest season is from early November to early December, when the cool weather helps bring out the radish’s characteristic qualities. This is an ideal time to look for Hiruzen daikon at local markets and enjoy the flavors of Okayama’s highland cuisine.
